The second ‘Bubble Time’ of our new Champagne Collet ‘Prix du Livre Pâtissier’ (prize for the best book by a pastry chef) took place at the Gaggenau Showroom on Tuesday 12 June. Aurelien Rivoire, chef at the Pavillon Ledoyen restaurant in Paris, presented his book, ‘Itinéraire d’un chef pâtissier’, published by Editions Hachette Pratique. In it, Aurélien Rivoire presents 50 very personal recipes which he wishes to share and pass on for posterity. Desserts from his childhood come with fascinating anecdotes which reveal his enduring passion for his craft. For his ‘Bubble Time’, the chef wowed the jury with his fine gold chocolate petals and caviar and artichoke crème served with our Champagne Collet Brut Vintage 2008 Collection Privée, and Ciflorette strawberries in grape must served with whipped Vanilla crème and a pressed pastry straw, paired with our Brut Rosé!
