The quintessence of the Aÿ Grand Cru Pinot Noir vinified in 2012, taking you on an elegant, sensory journey with roundness, fruity aromas.

This Grand Cru Champagne is a singleplot and single-varietal Blanc de Noirs vintage wine made exclusively from Pinot Noir grapes classified 100% Grand Cru, picked and selected in Aÿ in 2012. The selected vineyard plot extends over one hectare spread over two lieux-dits; La Côte du Moulin and La Porte aux Brebis. It adjoins the “Museum of Champagne traditional crafts and tools” and overlooks Maison Collet’s century-old chalk cellars. Its south-facing exposure allows it to produce sun-kissed fruit, revealing all the character of the Aÿ Grand Cru Pinot Noir; rich and elegant, soft and powerful. In 2012, Champagne experienced a very cold winter, followed by a very hot summer and August. The 2012 harvest produced a moderate volume of grapes but it was an excellent vintage thanks to its lovely maturity and a very fruity character. Limited edition of only 6,100 bottles

The Aÿ Grand Cru Collection Privée wine pairs perfectly with elegant gastronomy and will complement duck foie gras, consommé of sweet onion and chanterelle mushrooms, or veal cutlets served with morel mushrooms.

Appearence

Luminous, fluid, pale yellow hue, lively, fine bubbles with a longlingering bead.

Nose

Fine and concentrated on the first nose, notes of honeysuckle, blackcurrants, wild strawberries, pears and hazelnuts. Aromas of Mirabelle plum, ripe pineapple, passion fruit, orange, warm butter and sweet almonds.

Palate

Lovely freshness, supple, animated by soft, creamy bubbles. The aromas are fruity, pulpy, and underpinned by a lemon and orange acidity. Mineral, chalky-clay notes then develop bringing freshness and chewiness, and lengthening the palate. The freshness and fruity maturity endow this wine with a lush, succulent finish.
